Vegetarians need some help with preparing quick yet interesting meals

especially since they also live busy lives. Contrary to popular belief,

preparing a quick easy vegetarian meal may be a convenient task after

all. Here are some practical tips for a quick easy vegetarian meal.

Something is up with the site at this link. Here's a quote from a

section entitled " Vegetarian Cooking - Three Basics " . It talks about

not using TVP in place of beef in a chili con carne recipe. The

reasons it gives for not doing so:

" Furthermore, you haven't gained in terms of health or economy. Soy is

the primary ingredient of textured vegetable protein, tofu, and

tempeh. These are usually high in fat, high in processing, and fairly

high in cost. Not much better than organically raised meat, if at all.

So if chili con carne is what you want, buy organic meat and enjoy it! "

So the first basic of good vegetarian cooking is to buy organic meat?!?

I don't buy beef, but I'm pretty sure a pound of recently-tortured-to-

death organic cow carcass costs more than a pound of tofu. I did a

quick search online and found a place selling organic 85% lean ground

beef for $6.99 per pound. I'm guessing that's typical. What does a

pound of extra firm tofu cost? Maybe $2.00?

I did a quick search to compare fat & calories.

4 oz. of firm raw tofu has

165 calories

9.9g of fat (1.4g saturated fat)

0mg cholesterol

2.6g fiber

17.9g protein

t=4 & units=28.4

4 oz. serving of " 85% lean, fresh ground beef " (from a company called

Organic Prairie)

280 calories

17g fat (7g saturated)

100mg cholesterol

0g fiber

29g protein

So in terms of health and cost, I'll take the tofu over the beef any

day. But no matter how you feel about soy products (even highly-

process ones), no real vegetarian recommends organic beef over tofu.

The article then goes on to recommend oil & salt as the first two

basic ingredients of good vegetarian cooking.

Who writes this stuff? I'm guessing there's some sort of underlying

hidden agenda, and it's not to convert the world to a vegan diet.
