Perfect El Paso Pilaf

The Great American Meatout is right around the corner... March 20th! Get

ready to “kick the habit†for good with this Perfect El Paso Pilaf and other

amazing vegan dishes. Pilaf is easy to make, and you can be as creative as your

imagination and taste buds allow. Here’s a simple yet elegant recipe that can

be served as a delicious side dish or satisfying light meal on its own.

 

 

 

Ingredients:

½ cup chopped onion

2 tsp. olive or cooking oil

1 can (19 oz.) red kidney beans, drained

1 ¾ cup vegetable broth or water

1 cup long grain rice

1 cup fresh or frozen corn

1 cup chunky salsa, mild or hot

¼ cup dry lentils

¼ cup chopped sweet red pepper or diced pimento

½ tsp. chili powder

dash of garlic powder

8 tomato slices (optional)

Directions:

 

In large saucepan, cook onion in oil over medium heat about 5 minutes until

onion is tender.

Add the remaining ingredients.

Bring to boil, reduce heat, and cover; simmer 20 minutes or until rice and

lentils are tender and most of liquid is absorbed. Serves 4.

Veggies Kick Out Cancer

New research concludes that a diet high in vegetables can reduce the risk of

prostate cancer. The research, recently published in the online edition of

Molecular Nutrition and Food Research, reviewed available literature, including

29 cohort studies, 69

case-control studies, and 4 randomized clinical trials.

The researchers analyzed a number of plant foods and point to antioxidants

as the primary mechanism of this effect, protecting against DNA and cell damage.

Among the foods analyzed are tomatoes, yellow orange vegetables, as well as

cruciferous vegetables, including broccoli, cauliflower brussels sprouts,

cabbage, bok choy, collard greens and kale. Researchers also noted that

consumption of legumes, including soy and soy products, provides protection

against prostate cancer.
