Meatout Mondays March 9, 2009 Recipe Brussels Sprout Sauté Brussels sprouts belong to the cruciferous vegetable family, along with broccoli, cabbage, cauliflower, kale, and other similar veggies. They’re high in vitamins C and A, as well as lutein, an antioxidant necessary for good vision. Use your imagination and add your favorite mixture of vegetables to this easy, colorful, and delicious dish. Ingredients: 1 lb. baby carrots, scrubbed, stems trimmed 1 lb. brussels sprouts, ends trimmed & halved 1 ½  cups pearl onions (fresh or frozen) 3 garlic cloves, crushed 2 Tbs. olive oil salt & pepper (to taste) Directions: In roasting pan large enough to hold vegetables in one layer, combine carrots, brussels sprouts, onions, garlic, and olive oil. Roast in center of oven at 400 F; periodically stir or shake the pan until vegetables are brown and tender, about 30-40 minutes total. Season with salt and pepper and toss to combine; drizzle with more olive oil if desired. This is especially important because elevated blood pressure affects nearly 60% of American adults and is precursor for top killers, such as heart disease and stroke. The 10-year study involved 242 women between the ages of 18 and 21 years old. Researchers discovered that blood pressure, both the systolic and diastolic (top and bottom reading), was inversely associated with vitamin C levels. Women with the highest levels of vitamin C ate diets rich in fruits and vegetables and/or took vitamin supplements. Lowering blood pressure in healthy young adults may lead to lower blood pressure in older adults, reducing the risk of age-associated vascular problems.
