Meatout Mondays March 23, 2009 Recipe Spicy Meatout Bean Burgers Spring is in the air... it’s time for Meatout! People in all 50 states and 27 other countries are pledging to " kick the meat habit " at least for a day. Make these nutritiously delicious kidney bean burgers for the occasion and share them with friends. These burgers are loaded with protein and cholesterol-lowering fiber. An exceptionally healthy substitute for meat burgers, these hearty patties provide comparable nutrients without the high calorie content or saturated fat. Enjoy! Ingredients: 16 oz. can of red kidney beans, drained & mashed 1/2 cup small onion, coarsely chopped 1/2 green pepper, coarsely chopped 1 carrot, steamed & mashed 1/8 cup salsa (spicy or mild) 1 cup plain bread crumbs 1/2 cup whole wheat flour 1/2 tsp. black pepper (or to taste) dash of chili powder Directions: Mix all ingredients together; add more flour to create a firmer mixture, or more salsa if mixture is too stiff. Form into balls and press into patties. Bake at 450 degrees for 15 - 20 minutes, until firm, brown and done (or they can be grilled). Serve on a whole wheat bun with lettuce, tomato and salsa. Makes 8-10 burgers.
