Recipe

Roasted Veggies with Quinoa

You’ll fall in love with this warm winter combo. It’s made with a variety

of vegetables perched atop

protein-packed quinoa, a grain-like seed with a nutty flavor. The veggies

protect against all kinds of diseases, and

quinoa is one of the most nutritious foods on the planet. This dynamic duo is

sure to warm your heart. It’s

lovely to look at, nutrition-rich, and satisfyingly tasty. Enhance it with a

Ingredients:

1 butternut squash, peeled & chopped

1 bundle asparagus, chopped

1 parsnip, peeled &

chopped

1 bundle of carrots, peeled & chopped

1 sweet potato, peeled & chopped

1 red onion,

chopped

2 Tbs. olive oil

1 tsp. salt

1/2 tsp dried thyme

1/4 tsp ground black pepper

1 cup quinoa

seeds

Directions:

 

Toss vegetables with olive oil, salt, thyme, and pepper.

Arrange vegetables in single layer on baking sheet and bake at 400 degrees

for 40-50 minutes, turning once halfway

through.

While veggies are baking, combine 2 cups of water and quinoa seeds in a pot

over the stove; add a dash of salt and

bring to a boil.

Reduce heat, cover, and simmer for 15 minutes; fluff with a fork.

Spoon vegetables onto quinoa and enjoy.

Fruits, Veggies & Bone Health

A new study reveals that eating fruits and vegetables can boost bone health by

reducing calcium loss. The

body’s acid-alkali balance plays a significant role in bone health. While

fruits and vegetables are alkaline

foods, diets high in animal products, soda beverages, and most junk and

processed foods are highly acidifying.

The study, conducted by researchers from Tufts University and Northeastern

University, examined 171 men and women aged

50 and above. Researchers split participants into groups, giving them

supplements of varying pH levels and subsequently

analyzed bone health. Participants who consumed bicarbonate supplements

(alkali compounds) experienced significant

reductions in calcium loss through the bones.

" When fruits and vegetables are metabolized they add bicarbonate, an alkaline

compound, to the body,†says

Dr. Dawson-Hughes. “Our study found that bicarbonate had a favorable effect

on bone resorption and calcium

excretion. This suggests that increasing the alkali content of the diet may

attenuate bone loss in healthy older

adults.â€
