Cherry-Chocolate Mousse Pie

Nothing says " I love you " like chocolate, and who wouldn't love this easy

elegant pie? It’s made

with only five ingredients and there’s no baking involved! This pie is

adapted from one of the Ridiculously Easy

recipes on Susan V’s fat-free vegan kitchen blog where you’ll find ideas

for snacks,

soups, entrees, and desserts – all beautifully presented, easily recreated,

temptingly tasty vegan recipes. This

one isn't fat-free, but it's absolutely delicious. Yum!

 

 

 

 

Ingredients:

1/2 cup dried cherries

1 12-oz. box light silken tofu (or extra-firm silken tofu)

1 tsp.

vanilla

10 oz. semi-sweet chocolate chips

1 prepared Graham cracker crust

2-4 Tbs. organic sugar or maple

syrup

 

 

 

Directions:

 

Cover dried cherries with 1/2 cup boiling water and soak them until soft,

about 30 minutes.

Drain (and reserve) the water; put cherries into food processor, and pulse to

chop.

Drain tofu and add to food processor along with vanilla; process until

smooth.

Melt chocolate in double boiler or microwave.

Pour chocolate into food processor and purée, scraping down sides as needed

to make sure it's well

blended.

Pour into prepared crust and chill for several hours.

For the topping, take the reserved cherry-soaking water, add sugar or maple

syrup, and simmer on the stove until

it's reduced to a syrup (Tip: add some grenadine to the cherry syrup to

brighten the color if desired); drizzle

over pie just before serving. Makes 8 servings.

Love a Vegan Diet

A vegan diet lowers blood sugar better than a traditional diabetes food

program. That’s the

conclusion of a recent study published in this month’s issue of the Journal

of the American Dietetic

Association. The study also found a vegan diet lowered LDL (bad)

cholesterol, promoted weight loss, and helped

reverse heart disease.

Researchers from the Physicians Committee for Responsible Medicine, George

Washington University, and the University

of Toronto assigned 99 people with Type 2 diabetes to follow either a

conventional diabetes diet or a low-fat vegan

diet. During the 18-month study, each group met with a dietician and attended

nutrition and cooking lessons. The vegan

diet cut cholesterol and fat and increased fiber consumption compared to the

diabetes diet. Study participants on the

vegan diet lost weight, controlled their blood sugar and LDL cholesterol, and

reduced the need for diabetes medication.

Veggie-Tale Wedding

 

This couple won our hearts over with their veggie-tale wedding. Jessica

Humphries and Alvaro Tomaz

met in Brazil five years ago. Last year, when this globetrotting couple

decided to wed, they planned their nuptials in

an earth-friendly way.The wedding invitations were printed on paper made from

organic and recycled cotton T-shirts so

no trees were cut. Instead of wedding favors, donations were made to a

charitable cause. The decorations were made from

organic fruit and flowers then donated to a retirement community. The

bride’s engagement ring was a Brazilian

emerald (no diamonds, thank you). Best of all, the menu was completely vegan:

appetizers, dinner, wedding cake, and

sweets. Sweet…very sweet.
