Happy Passover!---Dan *Veggie Matzah Kugel* 2+ cups matzah farfel (from 4+ sheets of matzah) 4+ " eggs " (Ener-G vegan egg replacer or some other substitute) 1/4 cup cold water 2 medium onions 2 zucchini 1 red bell pepper 1 yellow bell pepper (or 2 of either pepper) [alternative vegetables: steamed broccoli, mushrooms, Asian eggplant, and/or yellow squash] enough oil for frying salt & pepper to taste [optional: garlic / garlic powder] Crush up sheets of matzah to make the farfel. Beat " eggs " , add cold water and fold into farfel. Let stand until liquid is absorbed. Slowly brown onions in oil, stirring when necessary. Add zucchini [or alternative vegetables] [and garlic] after onions have cooked for a while and mix. Add salt and pepper and mix. Add chopped bell pepper just before you finish cooking the veggies. Then mix. Blend cooked veggies into the farfel mixture. [This recipe is very flexible and forgiving, so feel free to experiment and don't worry if you accidentally veer off course.] Put in shallow (greased) pan for 30 minutes at 350 degrees in preheated oven. That's one of the fun things about cooking ... substituting! I remember going to a Contra Costa Vegetarians' potluck years ago, and someone brought a dish that required bread crumbs. He didn't have any at home, so he used crushed corn flakes. I don't remember how the dish tasted, I just remember what a creative solution that was.
