Meatout Mondays April 20, 2009 Recipe Tasty Tabouli Salad Earth Day is April 22nd, but every day is the perfect time to enjoy a healthy vegan meal. Since raising animals for food contributes more to global warming than all transportation combined, eating a plant-based diet demonstrates our respect for the Earth. Tabouli is a Middle Eastern salad that pairs well with hummus, carrots, olives, sliced apples and whole wheat pita bread. This recipe features bulgur, a nutritious quick-cooking form of whole wheat that's similar to rice and couscous. Ingredients: 2 cups bulgur 2 cups boiling water 1/2  tsp. sea salt 1/3  cup lemon juice 1/4  cup extra virgin olive oil 4 cloves garlic, minced 1 shallot, finely diced 8 scallions (spring onions), finely chopped 2 cucumbers, peeled, seeded & diced 1 packed cup fresh parsley, finely chopped 1 packed cup fresh cilantro, finely chopped 1 packed cup fresh mint, finely chopped 3 red tomatoes, diced Directions: Pour bulgur wheat into large bowl with salt and add boiling water; stir to dissolve salt, then cover bowl with plastic wrap; put into refrigerator until completely cooled (about an hour). Make dressing in a glass measuring cup by whisking together olive oil, garlic, and lemon juice; set aside until vegetables and herbs are cleaned, chopped and measured. Once wheat is cooled, add prepared herbs, vegetables, dressing and toss together; add more lemon juice and salt to suite your taste. Hint: This salad is best eaten within 24 hours after mixing in the herbs and veggies. When you look at the overall global warming picture, you’ll see that animal agriculture is responsible for 18% of greenhouse gas emissions and 80% of total land use. The Netherlands Environmental Assessment Agency investigated the impact on climate change of switching to a plant-based diet. They found the switch could have a dramatic impact on land use in addition to substantially reduced nitrous oxide emissions. Transitioning to a veg diet would allow vast agricultural areas of pasture and cropland to regrow as forest, soaking up large amounts of CO2, in combination with a reduction of methane and N2O emissions, mitigating the costs of climate change by 50-to-70% compared to a diet-as-usual scenario. The agency concluded that dietary changes could substantially benefit human health, global land use, and play an important role in future climate change mitigation policies. Elke Stehfest of the Netherlands Environmental Assessment Agency presented “Climate Benefits of Changing Diet†at the Copenhagen Climate Congress and published in the February issue of Climate Change.
