Meatout Mondays May 11, 2009 Recipe Sweet Potato Muffins for Mom Show Mom you care by making these oh-so-delicious yet also nutritious muffins. The featured ingredients are heart-healthy oats and sweet potatoes, which are rich in vitamin A and fiber. They also contain ground flax seeds, a great source of omega 3 essential fatty acids. Mom will love these muffins, and so will everyone else! Whip ‘em up and let your mother start the day with a deliciously warm, homemade treat… something over the top, yet just right. Ingredients: 1 cup quick rolled oats (plus 1/4 cup for topping) 1 cup whole wheat flour (plus 1/4 cup for topping) 1 tsp. baking powder 1/2 tsp. baking soda 1 tsp. ground cinnamon 1/2 tsp. nutmeg 1/4 cup ground flax seeds 1 cup fresh sweet potatoes, cooked & mashed 3/4 cup brown sugar (plus 1/4 cup for topping) 1/3 cup canola oil (plus 1-2 Tbs. for topping) 1/2 cup rice/soy/almond milk 1 tsp. vanilla (plus 1 tsp. for topping) Directions: Set aside 1/4 cup oats, 1/4 cup flour, 1/4 cup sugar, 2 Tbs. oil and 1 tsp. vanilla for topping. In a large bowl, mix the rest of the oats, flour, baking powder, baking soda, flax , cinnamon and nutmeg. Stir in sweet potatoes, brown sugar, oil, soymilk, and vanilla, just until well moistened. Fill oiled muffin tins 3/4 full. In a separate bowl, make the crumb topping by mixing together reserved oats, flour and sugar; with a fork; mix in oil and vanilla until crumbly. Generously sprinkle crumb topping on muffins and bake 15-20 minutes at 400 degrees. Makes a dozen muffins.
