Recipe

Broccoli, Carrot & Almond Salad

Broccoli is the more colorful relative of the cauliflower, both belonging to

the cabbage family. Loaded with fiber, nutrient-rich, and low in calories,

broccoli’s vitamin C content helps prevent heart disease and stroke. It also

contains beta carotene, which strengthens the body’s immune system, and

phytonutrients, which stimulate production of enzymes that fight cancers.

Here’s a simple recipe that’s tasty and offers lots of nutrition from

broccoli, carrots, and

almonds.

Ingredients:

 

1 head broccoli (fresh or frozen)

2 large carrots

1/3 cup almonds, sliced & toasted

1 Tbs. vinegar

2 tsp. mustard

1 tsp. sugar

salt & pepper (to taste)

Directions:

 

Bring a pot of water to boil; add carrots and boil for 2 minutes (no

longer); remove them with skimmer and keep the water boiling.

Add broccoli florets and cook 2 minutes (no longer); remove and rinse with

ice-cold water to stop cooking.

In a large bowl, make the dressing by combining vinegar, mustard, sugar,

salt, and pepper; add vegetables to the dressing and mix.

Toss in sliced almonds and serve. Makes 4 servings.

Broccoli Sprouts Beat Germs

Eating broccoli sprouts can help control the germ associated with peptic

ulcers and stomach cancer, according to a study published in April’s Cancer

Prevention Research. Over a period of eight weeks, researchers examined fifty

people infected with the germ Helicobacter pylori. One group of participants ate

2.5 ounces of broccoli sprouts a day,

while the other consumed an equal amount of alfalfa sprouts. Findings revealed

that the broccoli eaters had significantly reduced levels of infection, while

levels in the control group remained unchanged.

While there are antibiotic treatments for the infection, researchers note

that drugs are not always effective and can have unpleasant side effects.

“We’re enthusiastic about the results,†said study co-author Dr. Jed

Fahey, “On a public health scale, a relatively small shift in dietary habits

can have a large effect on chronic disease.â€
