Meatout Mondays May 18, 2009 Recipe Shitake-Tofu Lettuce Wraps Mushrooms are used extensively in many cuisines, notably Chinese, European, and Japanese. Full of fiber, most mushroom varieties are a good source of minerals, especially potassium, and vitamins, particularly vitamin B. Mushrooms are also a superb protein source because of their exceptional amino acid content. Add sliced fresh mushrooms to tossed salads, sauté and season them, or even chop and add them to sauces, soups, and stews. Ingredients: 1 head of lettuce 1 lb. extra firm tofu (drained) 2 1/2 cups shitake mushrooms, chopped 4 Tbs. fresh garlic, chopped 2 Tbs. fresh ginger, chopped 4 oz. water chestnuts, chopped 1-2 Tbs.soy sauce red pepper flakes (to taste) pepper (to taste) Directions: Dice tofu into small bite-size cubes and spread them out on a cookie sheet. Sprinkle tofu with red pepper flakes and soy sauce; bake at 350º F for 35-45 minutes. In a wok or frying pan, sauté garlic and ginger for about 5-7 minutes. Add mushrooms; add more soy sauce & red pepper flakes if desired; cook 10-12 minutes. Add water chestnuts and tofu; cook another 2-5 minutes. Wash and dry the lettuce and pull off pieces about the size of your palm; spoon the mixture into the leaves and roll them up.
