Owners Jeff and Joan Stanford, vegetarians for over 20 years, planted organic

gardens which provide produce for Ravens' menu.

 

Hisae Matsuda writes: " . . . gourmet dinner menus are purely vegan. Young

executive chef Barry Horton is proud to show diners that we can all eat well

without contributing to animal suffering. Horton brings a classical French

sensibility to vegan ingredients from his training at the Cordon Bleu-accredited

Western Culinary Institute in Portland, Oregon. Acknowledging the growing

presence of live foods in the vegan diet, he also tries to include at least one

raw entree on each seasonal menu. "
