Owners Jeff and Joan Stanford, vegetarians for over 20 years, planted organic gardens which provide produce for Ravens' menu. Hisae Matsuda writes: " . . . gourmet dinner menus are purely vegan. Young executive chef Barry Horton is proud to show diners that we can all eat well without contributing to animal suffering. Horton brings a classical French sensibility to vegan ingredients from his training at the Cordon Bleu-accredited Western Culinary Institute in Portland, Oregon.
