Portobello & Pepper Panini

If you love a good sandwich, you’re in for a treat! Hearty portobello

mushrooms and vitamin-rich red peppers combine flavors with soy sauce and vegan

rice cheese, culminating in a tasty feast that’s quick, light, satisfying, and

delicious. You can pack it for a picnic or wrap it for work, but make enough to

share... this one’s too good to keep to yourself!

 

Ingredients:

 

6 cups portobello mushrooms, sliced 1/4 " thick

1 ½ tsp. soy sauce (or veg Worcestershire sauce)

1 loaf Italian bread

1/2 cup water-packed roasted red bell peppers

4 Vegan Rice Slices, Pepper Jack (see product)

thyme sprigs

(optional)

vegetable cooking spray

Directions:

 

Slice bread in half lengthwise & cut into 4 pieces, about 1 " thick; lightly

toast & set aside.

Cut the roasted red bell peppers into thin strips and set aside.

Coat a large non-stick skillet with cooking spray, and place over

medium-high heat until hot; add mushrooms and sauté for 4 minutes or until

lightly browned; remove from heat and stir in soy sauce.

Spoon about 1/3 cup mushroom mixture onto each bread slice; top each with

1/4 of the bell pepper strips and a Vegan Rice Slice.

Place the sandwiches on a baking sheet and broil for 2 minutes or until

Vegan Rice Slices are melted. Or heat heavy frying pan or griddle and grill

sandwiches about 5 minutes each side. Makes 4 servings.

Dairy Linked to Parkinson’s

Men who consume large amounts of dairy products increase their risk of

developing Parkinson’s disease, which attacks the nervous system. That’s

according to research published in the American Journal of Epidemiology.

Researchers at the National Institute of Environmental Health Sciences came

to this conclusion after analyzing data on more than 57,000 men and 73,000 women

compiled between 1992 and 2001. While it’s unclear as to how dairy products

act as catalyst for the degenerative disease, previous studies have indicated a

link between dairy and Parkinson's.

Inspiration

Young Animal Activist Award

Meili Swanson is a 15 year-old Sophomore at Northview High School in

Georgia. After turning vegetarian 3 ½ years ago, she quickly decided to take

the next step and become vegan. Meili has been active in educating others about

the benefits of a compassionate lifestyle ever since! In addition to spreading

the message to her peers at school, she is very active with her local animal

rights group, Georgia Animal Rights & Protection.

Due to her exceptional dedication, Meili was awarded the Young Animal

Activist Award at the Animal Rights 2008 National Conference last summer.

Do you know a young animal advocate? Each year, the Animal Rights National

Conference presents the Young Animal Activist Award to a young person who has

made a substantial contribution to promoting animal rights before his/her 18th

birthday. The Award consists of a plaque and a $500 cash prize.

 

 

To nominate a young advocate for the Award, please e-mail us an application

with a 1-2-page account of the candidate's accomplishments in promoting animal

rights. The application may also include up to 3 pages of supporting materials,

including letters from animal rights leaders or others.
