Meatout Mondays June 15, 2009 Recipe Portobello & Pepper Panini If you love a good sandwich, you’re in for a treat! Hearty portobello mushrooms and vitamin-rich red peppers combine flavors with soy sauce and vegan rice cheese, culminating in a tasty feast that’s quick, light, satisfying, and delicious. You can pack it for a picnic or wrap it for work, but make enough to share... this one’s too good to keep to yourself! Ingredients: 6 cups portobello mushrooms, sliced 1/4 " thick 1 ½ tsp. soy sauce (or veg Worcestershire sauce) 1 loaf Italian bread 1/2 cup water-packed roasted red bell peppers 4 Vegan Rice Slices, Pepper Jack (see product) thyme sprigs (optional) vegetable cooking spray Directions: Slice bread in half lengthwise & cut into 4 pieces, about 1 " thick; lightly toast & set aside. Cut the roasted red bell peppers into thin strips and set aside. Coat a large non-stick skillet with cooking spray, and place over medium-high heat until hot; add mushrooms and sauté for 4 minutes or until lightly browned; remove from heat and stir in soy sauce. Spoon about 1/3 cup mushroom mixture onto each bread slice; top each with 1/4 of the bell pepper strips and a Vegan Rice Slice. Place the sandwiches on a baking sheet and broil for 2 minutes or until Vegan Rice Slices are melted. Or heat heavy frying pan or griddle and grill sandwiches about 5 minutes each side. That’s according to research published in the American Journal of Epidemiology. Researchers at the National Institute of Environmental Health Sciences came to this conclusion after analyzing data on more than 57,000 men and 73,000 women compiled between 1992 and 2001. Inspiration Young Animal Activist Award Meili Swanson is a 15 year-old Sophomore at Northview High School in Georgia. After turning vegetarian 3 ½ years ago, she quickly decided to take the next step and become vegan.
