Recipe

Chilean Spiced Dahl

Spice things up and try something exciting! This recipe is adapted from

National Public Radio’s “How Low Can You Go†family supper challenge,

where professional chefs and listeners submitted recipes for a delicious meal

for four people that cost less than $10. This mouth-watering meal is a

traditional Indian lentil dish called Dahl and it's enhanced with Chilean

seasonings. It's a cost-effective high-protein meal that the whole family will

enjoy. Try it served with rice

or flatbread.

Ingredients:

 

3 cups dried lentils

2 cups potatoes, chopped

2 carrots or parsnips, chopped

3 tomatoes, chopped

1 hot pepper

1 small onion, chopped

2 gloves garlic, chopped

16 oz. tomato sauce

1 tsp. cumin

dash of beer, sherry, or cooking wine (optional)

dash red

vinegar

olive oil

1/2 cup fresh cilantro, chopped

salt & pepper (to taste)

Directions:

 

Rinse and cook lentils in 6 cups of water until soft (bring to a boil and

simmer 20-30 minutes); drain and set aside.

In a large pot, sauté onions, garlic, hot pepper, and cumin in olive oil;

add optional beer or cooking wine.

Add potatoes and carrots; cover with water and bring to boil.

Add tomatoes and cook until potatoes are soft.

Add lentils and tomato sauce.

Salt and pepper to taste (add more water if it's too thick or vinegar if

it's too sweet; add more cumin or hot sauce if you prefer it spicy).

Stir in chopped cilantro and remove from heat; serve after a few minutes.

recent study confirms that organic fruits and vegetables are about 25% more

nutritious than conventionally grown produce. “New Evidence Confirms the
