Meatout Mondays June 1, 2009 Recipe Green Goddess Garden Dip Get some greens and enjoy! This simple Green Goddess Garden Dip can be served as a salad dressing or an appetizer with raw veggies, bread sticks, crackers, or chips. It’s also great as a condiment on sandwiches, cooked vegetables or grains. It's so versatile and absolutely delicious. Ingredients: 1/2 cup green onion, thinly sliced 1 Tbs. garlic, minced 1 Tbs. olive oil 8 oz. spinach, washed, patted dry & de-stemmed 1 avocado, peeled, pitted & diced 1 cup loose fresh parsley, washed 1/4 cup chives, sliced 1 Tbs. freshly chopped dill 1 Tbs. lime juice 1/4 tsp. salt 1/4 tsp. hot sauce 1 - 8 oz. plain vegan soy yogurt (see product) Directions: In a large, non-stick skillet, sauté the green onion and garlic in the olive oil for 2 minutes to soften; add spinach and continue to sauté until spinach just wilts. Remove the skillet from the heat and set aside to cool completely. Transfer spinach mixture to a food processor; add the remaining ingredients, except the vegan yogurt, and process for 2-3 minutes or until smooth. Add soy yogurt and process well to combine. Taste and add additional salt, hot sauce, or lime juice, to taste. Transfer the mixture to a glass bowl, cover, and chill for 30 minutes to allow the flavors to blend. Makes 2 cups.
