What's an easy way for people to incorporate more vegetables into their diets? Even when you're eating in a restaurant, you can ask for your pasta primavera-style, and it will come with all kinds of veggies in the sauce. Or, order a side of veggies or a small salad and top your baked potato with them. Do people always need to follow recipes to cook a satisfying vegetarian meal? Always? More often it's never! Any grain, potato or pasta can be the center of a meal. Top them with steamed veggies and any sauce — even just soy sauce or seasoned rice vinegar — and there's a fast, delicious and health-promoting meal. What is your favorite recipe in the book? The Life Saving, Time Saving, No Recipe Dinner Formula. It's a chart and you can pick anything from columns one, two and three to create a scrumptious meal. What vegetarian meal do you recommend if cooking for a nonvegetarian? Probably vegan lasagna. Most of the people I know who are not vegetarian love this one and ask for the recipe. What prompted you to write the book? I wanted to debunk the myth that it's hard work to eat well.
