Recipe

Thai-Style Vegetable Curry

Spice up your summer and your health! This amazing Thai Vegetable Curry is

one of the many ways you can incorporate the benefits of broccoli into your

diet. Broccoli is a great source of vitamins C, K and A, folic acid, and fiber.

So give this recipe a try… it’s quick to prepare and easy to fall in love

with. Serve it over red or brown rice for a fulfilling, nutritious meal.

 

Ingredients:

1 large bunch broccoli

2 tsp. garlic, minced

2 cups coconut milk

2 Tbs. tamari soy sauce

1 1/2 tsp. dried lemongrass, finely ground

1 tsp. dried basil leaves

1/2 tsp. ground coriander

seeds

1/8 tsp. cinnamon

1/4 tsp. ground cardamom

pinch of crushed red pepper flakes

1 lb. sweet potatoes, peeled & chopped

1/2 lb. fresh mushrooms, halved or quartered

1 1/2 cups cooked chickpeas

Directions:

 

Cut florets from the broccoli stalks and cut each floret so that the top

measures about 1 inch across; peel off the outer skin of the stalks and cut into

1/2-inch dice; set aside.

 

 

Heat 1 Tbs. of water in a large pot (hint: using a pressure cooker will

take half the time); cook garlic over medium-high heat, stirring constantly, for

1-2 minutes.

 

 

Add the coconut milk, soy sauce, lemongrass, dried basil, spices, red

pepper flakes, reserved broccoli stalks, sweet potatoes, and mushrooms.

 

 

Over high heat, bring to a boil, stirring occasionally; reduce heat, cover,

and cook until sweet potatoes are tender (about 10 minutes).

 

 

Stir in the broccoli florets and chickpeas; replace the lid and cook over

medium heat until broccoli is tender-crisp (about 5 mintues).

Broccoli Strengthens Genes

Just a few portions of broccoli each week helps protect men from prostate

cancer,

according to research published in the Public Library of Science Journal PLoS

One. The researchers found that a chemical in the food sparks genetic changes,

activating some genes that fight cancer and switching off others that fuel

tumors. Past research provides evidence linking a healthy diet rich in fruits

and vegetables to reduced cancer risk, but this is a human trial investigating

the potential biological mechanism at work.

The study examined men with pre-cancerous lesions that increase prostate

cancer risk. Findings reveal that men who ate four extra servings of either

broccoli or peas each week for a year showed hundreds of changes in genes known

to play a role in fighting cancer.

The benefit would likely be the same in other cruciferous vegetables that

contain a compound called isothiocyanate, including brussel sprouts,

cauliflower, cabbage, rocket or arugula, watercress and horse radish. Broccoli,

however, has a particularly powerful type of the compound called sulforaphane,

which could give the green vegetable an extra cancer-fighting kick.

AR2009 in Progress

Every summer, hundreds of compassionate individuals gather at the Animal

Rights National Conference to network, learn, educate, celebrate, and much more!

This year,

the conference is taking place in Los Angeles at the Westin LAX.

The four-day program features nearly 100 presenters from more than 60

organizations, appearing in plenary sessions, workshops, campaign reports, and

rap sessions. Other elements include exhibits, videos, newcomer orientations,

group workouts, and entertainment by animal-friendly musicians. On Saturday, the

celebrity animal advocate award will be presented to Jane Velez-Mitchell,

celebrated anchor of Issues with Jane Velez-Mitchell on HLN (formerly CNN's

Headline News). Other celebrities in attendance will be film and TV stars

Charlotte Ross and Elaine Hendrix, and comedians French Stewart and ANT. Take a

The Animal Rights National Conference is a great way to learn about the

issues and have a great time. The exhibit hall is FREE and open to the public,
