Meatout Mondays July 13, 2009 Recipe Basil Pesto Primavera Here’s an energizing entrée filled with fresh herbs, veggies and protein-rich nuts. Pesto is a classic Italian herb sauce typically prepared with basil and garlic – ideal for pasta or salads. This dish demonstrates how basil can enrich any meal, bringing to it both flavor and nutrients. Basil is a notable source of vitamin A, iron, calcium and potassium. It also adds a bold, satisfying flavor to the dish, transforming pasta and veggies into a deliciously invigorating meal. Ingredients: 3 cups fresh basil (or 2 cups basil + 1 cup spinach) 3-4 large cloves garlic 1/4 cup walnuts, pine nuts, or raw cashews 1/2 container silken tofu (about 6 oz.) 2 Tbs. water 1/2 tsp. salt (or to taste) 1 lb. whole wheat pasta 1-2 large tomatoes, chopped additional nuts (to taste) Directions: Cook pasta according to package directions and rinse with cool water. In food processor, chop garlic and nuts until finely minced. Add remaining ingredients and process until smooth. Toss pasta with sauce and tomatoes (and any other seasonal veggies); sprinkle with nuts.
