Father's Day Shortcake Special

When life gives you berries, you have to make shortcake. Vegan Dad considers

this the quintessential summer dessert… and it’s the perfect way to show

your dad special appreciation for Father’s Day. You can serve it with whatever

berry or fruit is in season. And while we’re on the subject of baked goods,

don’t forget to join the Worldwide Vegan Bake Sale (June 20 - 28th)!

Ingredients:

1 ¾ cup flour

¼ cup powdered sugar

1 Tbs. baking powder

¾ tsp. salt

5 Tbs. cold margarine (try Earth Balance)

generous ¾ cup soy creamer (or soy milk)

Directions:

Whisk together flour, baking powder, sugar, and salt in a bowl.

Cut in cold margarine (or use your fingers).

Mix in soy creamer with a wooden spoon; add a splash more if dough is too

stiff.

Spread batter in a 9 " non-stick round pan (or, grease and flour a pan if

you don’t have a non-stick one).

Bake for 15-17 minutes at 450 degrees, until lightly brown on top; let cool

for 5 minutes, then remove from pan and cool on a wire rack.

Cut into wedges and top with berries and soy, rice, or coconut ice cream.

The Vegan Dad Cookbook

If making delicious food the whole family can enjoy seems like a daunting

task, then you need The Vegan Dad Cookbook. In it, author Nathan Kozuskanich

features over 120 kid-friendly vegan recipes (you can find some of them on his

blog). There are recipes you can whip up for kids when time is of the

essence. And when time permits, there are more elaborate, even gourmet dishes

– ones from around the world to around the kitchen with good ol’ fashioned

comfort food to veggie dogs and beyond. The Vegan Dad Cookbook provides the

answer to that daily question, “What’s for dinner?†It’s available in

hard copy and as an e-book that you can download in just minutes.

Kids Eat Healthy if Parents Do

The grocery store can be a classroom where parents teach children the value

of foods like fruits, vegetables and whole grains over snacks and desserts. This

conclusion is based on findings reported in the Archives of Pediatrics &

Adolescent Medicine that suggest children adopt their parents' food choices at a

very young age. Researchers found that

even very young children do not indiscriminately reach for candy when given the

chance. They seem to have food preferences based on their parents' shopping

habits.

" Nutrition interventions for children most often begin with school-aged

children, " lead author Dr. Lisa A. Sutherland writes. " This study suggests that

preschool children are already forming food preferences and are attentive to

food choices made by their parents. " Giving preschoolers a taste for healthy

foods could ultimately make it easier for them to keep up a lifetime of smart

eating.

A study more recently published online in Social Science & Medicine found

that children whose parents eat healthy are three times more likely to adopt a

healthy diet compared to the kids whose parents don’t.

Inspiration

Vegan Dad Extraordinaire

Vegan Dad Nathan Kozuskanich has been referred to as “the dad you always

wanted, only he makes a better meatloaf.†And his blog and cookbook prove it!

Here’s a dad who shares his life through recipes, ranging from simple to

spectacular, which makes him a simply spectacular dad in our recipe book!

Father of three boys and a brand new baby girl, Vegan Dad explains that he

is trying to do the best for his family and the planet “by living in a way

that respects the earth.†He says, “My Vegan Dad blog has tried to show how

various and exciting the vegan food world is, and how we can re-conceptualize

what family-friendly meals

are.â€

Vegan Dad is always looking for good food ideas and is fascinated by ethnic

foods; his recipes are interesting and inspiring, and – as he puts it – “a

realistic look at a vegan family in a northern Ontario city that is not always

vegan-friendly.â€
