Vegan Dad considers this the quintessential summer dessert… and it’s the perfect way to show your dad special appreciation for Father’s Day. Ingredients: 1 ¾ cup flour ¼ cup powdered sugar 1 Tbs. baking powder ¾ tsp. salt 5 Tbs. cold margarine (try Earth Balance) generous ¾ cup soy creamer (or soy milk) Directions: Whisk together flour, baking powder, sugar, and salt in a bowl. Cut in cold margarine (or use your fingers). Mix in soy creamer with a wooden spoon; add a splash more if dough is too stiff. Spread batter in a 9 " non-stick round pan (or, grease and flour a pan if you don’t have a non-stick one). Bake for 15-17 minutes at 450 degrees, until lightly brown on top; let cool for 5 minutes, then remove from pan and cool on a wire rack. Cut into wedges and top with berries and soy, rice, or coconut ice cream. Researchers found that even very young children do not indiscriminately reach for candy when given the chance. They seem to have food preferences based on their parents' shopping habits. " This study suggests that preschool children are already forming food preferences and are attentive to food choices made by their parents.
