Gone to the DogsThis weekend's holiday means two things: a fantastic yearly excuse to run around recklessly with sparklers, and barbecues. Hot dogs are just about mandated at 4th of July cookouts, which fits perfectly into National Veggie Hot Dog Month. For the fourth consecutive year, Compassion Over Killing has turned the meat-industry-declared "National Hot Dog Month" into a cruelty-free celebration of meatless dogs. Bring an extra pack to your next barbecue, and share the joy of veggie eats with friends and family.

Earth Day, Minus MeatIf you've ever felt slightly incongruous attending Earth Day celebrations that focus on meat, you're not alone. Dennis Kucinich, vegan politician extraordinaire, officially inaugurated June 21st this year as the first annual Vegan Earth Day. Congrats to the esteemed Congressman for championing his eco-friendly, cruelty-free lifestyle.

Black Raspberry Ice Cream

Now that it's officially summer, it's officially time to make as many kinds of homemade vegan ice cream as you possibly can. Thanks to Wheeler del Torro's recently released tome, The Vegan Scoop, all the heavy lifting of creating flavor combinations is done for you. If black raspberries aren't readily available, this recipe also makes a stellar strawberry scoop. Don't miss the full review of The Vegan Scoop in the September+October issue of VegNews!

 

Makes about 1 quart

What You Need:1 cup soymilk, divided2 tablespoons arrowroot powder1 cup fresh black raspberries, divided2 cups soy creamer3/4 cup sugar1 tablespoon vanilla

What You Do:1. In a small bowl, mix 1/4 cup soymilk with arrowroot and set aside. In a blender, purée 1/2 cup raspberries, soy creamer, remaining 3/4 cup soymilk, and sugar.

2. Transfer mixture to a medium-size saucepan and cook over low heat. Once mixture begins to boil, remove from heat and immediately add arrowroot cream. This will cause the liquid to thicken noticeably. Add vanilla extract.

3. Refrigerate mixture until chilled, approximately 2 to 3 hours. Freeze according to your ice cream maker’s instructions. In the last few minutes of churning, add remaining 1/2 cup raspberries.
