Recipe

Amazing Coffee Cake

In addition to being delicious and easy to prepare, this coffee cake

contains flax, which is high in omega-3 essential fatty acids, also known as

" good " fats. Flax has been studied for lowering cholesterol, stabilizing blood

sugar, and reducing the inflammation of arthritis as well as the risk of certain

cancers. So you can indulge in this tasty treat and feel good about the

ingredients!

Ingredients:

2 3/4 cups whole wheat pastry flour

1 1/4 cup sugar

1 tsp. cinnamon

3/4 tsp. nutmeg

1/2 tsp. cloves

1/2 tsp. allspice

1/2 cup walnuts, finely chopped

1 cup + 1 Tbs. vegan margarine

1 1/4 cups soy or rice milk

1/2 tsp. salt

1 Tbs. baking powder

1/2 cup raisins

2 Tbs. flax seeds or

flax seed meal

Directions:

 

Grease a 10 " cake pan with 1 Tbs. margarine and sprinkle with 1 tablespoon

of flour; shake pan around until all sides are coated.

Sift the flour, sugar, cinnamon, nutmeg, cloves, allspice, and walnuts; cut

in the margarine (Note: don't mix, just crumble); reserve 1 cup for topping.

Grind flax seeds to a fine powder if using whole seeds (disregard if using

flax seed meal).

Combine soy or rice milk, salt, and baking powder in bowl and add to dry

mix; beat with a whisk until well blended; mix in the raisins.

Put liquid mixture in pan and sprinkle reserved cup of topping on it.

Bake at 350 F for 40-45 minutes or until knife comes out clean.

Flax Reduces Cholesterol

Flax seeds and their

derivatives can help control cholesterol. That’s according to an analysis

published in this month’s American Journal of Clinical Nutrition. Researchers

have concluded that flax seed consumption significantly reduces circulating

total cholesterol and low-density lipoprotein (LDL) cholesterol levels.

The researchers searched all randomized controlled trials of flax seed or

its derivatives on lipid profiles in adults, which were published in English

from January 1990 to October 2008. The 28 trials used in the meta-analysis

comprised a total of 1,381 study subjects.

Findings reveal that whole flax seeds and flax seed lignans (a group of

chemical compounds) significantly reduce circulating total cholesterol and

low-density lipoprotein (LDL) cholesterol levels. The greatest effect was found

in postmenopausal women and individuals with high initial cholesterol

concentrations.

Inspiration

Paul McCartney: Inspired!

Paul McCartney recently began publicly supporting the UK campaign Meat Free

Mondays in an effort to cut carbon emissions. According to a UK news article,

“Sir Paul read about the campaign in America and decided he needed to get

involved. Meatout Mondays have been promoted by the American charity Farm (Farm

Animal Rights Movement).â€

Sir Paul is speaking out to persuade people to go veggie once a week to

reduce greenhouse gas emissions and do something positive to help heal the

planet. His youthful look is a great advertisement for a vegetarian diet, and he

is tireless in his willingness to write letters to celebrities and chefs, talk

to schools and round up support from as many people as he can. He even

influenced a prominent London restaurant to promote meat-free dishes every

Monday.

We’re delighted that Meatout Mondays has touched Paul McCartney and that

it is appreciated by people all around the world. Hopefully the UK Meat Free

Mondays campaign will continue to be inspired by Meatout Mondays and take the

next step by publicizing the health, environmental, and compassionate benefits

of a fully vegan diet.
