Recipe

Spinach Mango Orzo Salad

Here’s an excellent anytime meal! Tasty orzo pasta is coupled with the

nutritional advantages of spinach, mangoes, and oranges, which contain vitamins

A and C as well as bone-strengthening calcium. Almonds, in addition to having

more calcium than any other nut, contain vitamin E, magnesium, potassium, zinc,

iron, and fiber. And let's not forget about turmeric, which has been found

beneficial in treating conditions from cancer to Alzheimer’s disease. Eat up!

 

Ingredients:

1 ½ cup orzo (preferably whole-wheat)

1/4 cup fresh orange juice (about 2 oranges)

2 Tbs. almond or olive oil

2 tsp. balsamic vinegar

2 ½ tsp. turmeric

 

Grated zest of 1 orange

1/4 tsp. sea salt or to taste

3/4 cup almonds, coarsely chopped

4 cups fresh spinach

1 mango, diced (about 1 cup)

Freshly ground pepper

Directions:

 

Cook orzo according to package directions until just al dente (pasta should

be firm but not hard); drain in colander.

While orzo cooks, whisk the orange juice, oil, vinegar and turmeric in a

large bowl.

Add orzo to bowl and stir with a rubber spatula to mix well; add orange

zest and sea salt and mix again; cover and set aside for up to 2 hours (or

refrigerate, bringing salad back to room temperature before proceeding).

Spread almonds on a baking sheet and toast at 400 degrees until golden and

fragrant (about 8 minutes), checking several times to avoid burning; set aside

to cool slightly.

Stir spinach, mango, and toasted almonds into orzo mixture; season to taste

with salt and pepper. Makes 4 to 6 servings.

Veggies Boost Brain Power

Have you had your veggies

today? Get some leafy greens to keep your brain healthy. According to a new

study by the Chicago Health and Aging Project, adults over the age of 65 who

consume at least three servings of vegetables a day — especially green leafy

vegetables like lettuce and spinach — maintain their mental abilities 40

percent longer than those who eat less than one serving per day. The study of

more than 3,700 men and women tracked mental function at three years into the

study and again six years

in.

This study is not the first to link mental function with vegetable intake.

The Nurses Health Study also found that women who consumed more green leafy

vegetables had a slower mental decline than women who consumed the least. These

studies add to the many reasons to eat your veggies.

Inspiration

AR2009's Young Animal Activist

Never seeking attention or publicity, Jack Nunn quietly and steadfastly goes

about the business of helping animals. It is his integrity,

resolve, dedication and passion for animal advocacy that won this 18-year-old

from New York City the Young Animal Rights Activist Award at the recent Animal

Rights 2009 National Conference in Los Angeles.

Over the past 5 years, Jack has spent his free time speaking out against

animal abuse. He has joined demonstrations against the use of animals for

vivisection, fur, circuses, and carriage horses in New York City. He has also

joined annual public education campaigns like the Great American Meatout and

World Farm Animals Day (coming up in October). Jack also conducts research, runs

social networking websites and activated a group

at Hunter College called HART – Hunter Animal Rights Team.
