Cannellini Bean Salad

Bean salads are particularly hearty and should be an essential part of any recipe file. The combination of fresh veggies and nutty cannellini beans along with vibrant basil and dressing compliment each other nicely. This salad is more than delicious... it’s loaded with nutrition too. Beans are a low-fat source of protein, carbohydrates and fiber. The veggies, herbs and oil offer vitamins and minerals. So bring this dish to your Labor Day celebration or any potluck and enjoy!

Ingredients:

1 large sweet red pepper (or roasted red peppers from a jar) 2 cans (15 oz.each) white kidney or cannellini beans 1 medium red onion, sliced & separated into rings 1/4 cup fresh basil, minced 3 Tbs. red wine vinegar 2 Tbs. olive oil 1/4 tsp. salt 1/4 tsp. pepper

Directions:

 

If using a fresh pepper, cut the red pepper in half and remove seeds.

Broil pepper cut side down 4" from the heat until the outside blisters (about 8 minutes).

Immediately place pepper in a small bowl; cover and let stand for 15-20 minutes; peel off and discard charred skin.

Cut pepper into strips and place in a large bowl; drain and rinse the beans and put into the bowl with onion and basil.

In a jar with a tight-fitting lid, combine the vinegar, oil, salt and pepper; shake well; pour over bean mixture and toss to coat. Serves 5.

Oil Helps Nutrient Absorption

Adding oil-based salad dressing to your veggies will help you to absorb nutrients. That’s according to scientists at Iowa State University who recruited graduate students for the study.

The students ate salad greens and tomatoes along with various types of salad dressings every day for one month. Researchers analyzed blood samples before and after they’d eaten the salads in order to get precise measurements of the absorption of nutrients. Results revealed that people who had eaten fat-free or low-fat dressings didn’t absorb the beneficial carotenoids from the salad. Only the oil-based dressing helps the body absorb nutrients.

Carotenoids are the pigments responsible for red-, yellow- and orange-colored fruits and vegetables, and are found in dark green vegetables such as spinach. Studies reveal that carotenoids have antioxidant activity which help protect cells from damage caused by free radicals. Human studies have linked high consumption of fruits and vegetables to reduced risk of cancer.

Researchers were not surprised by the findings of the fat-free vs. regular salad dressing study. “We already knew that carotenoids were fat soluble,†explains Wendy White, a professor of Human Nutrition at Iowa State University. The results helped reinforce the idea that a little fat is healthy.

Other ways to help maximize the absorption of carotenoid nutrients include chopping or grating; the finer the particle size, the better the absorption of beta-carotene.
