Their new estimates include enteric fermentation and land use pressure due to the tens of billions of land animals used for food. Since The China Study is constently waitlisted at the Ithaca library, these additional copies will enable more people to have access to this information. We also sent a box of books to Pakistan! TCCT Lecturers at Fingerlakes Bioneers ConferenceThe first annual Finger Lakes Bioneers Conference was held at Ithaca College this past week. There were some incredible local lectures along with the presentations beamed in from the conference in California. Dr. Antonia Demas and Food Educator, Ariel Demas from the Food Studies Institute showed data on improved behavior and academic scores in students who have plant-based food education programs included in their school curriculum. And an evening lecture on Threats to Our Oceans by David O. Brown, from Amphibious Films and Dr. Bruce Monger, Earth and Atmospheric Sciences Department at Cornell University revealed how our eating habits both of land and sea animals are having catastrophic impacts on our common ocean resources.Dr. Antonia Demas, Ariel Demas, and Dr. Bruce Monger are all part of the eCornell Certificate in Plant-Based Nutrition. If you missed them at the conference please check out their guest lectures in the courses!12 Inch Dinner Pizza for TwoThanks go to Karen Hanford for sharing this recipe!16 oz pizza dough, whole wheat if possible 1/2 cup of your favorite sauce, or more, to taste1 long, thin eggplant sliced into 1/2" thick rounds1/2 medium onion sliced into 1/2" thick rounds3-4 gloves garlic diced1/2-1 tsp. each date sugar, dried basil or oregano, spicy seasoned salt, & dried mint leaves (optional)Olives, chopped and marinated artichoke hearts, additional spices, seasoning, & date sugar to taste.For a thin crust pizza, use only half the dough and reserve the other half for later. Spread dough on a 12" round pizza pan and cover evenly with sauce. Place date sugar, spices, and salt in a plastic sandwich bag, add eggplant rounds and shake to coat. Place eggplant on pizza as you would pepperoni. Repeat process with onion and place over eggplant. Sprinkle with diced garlic, olives, and artichoke pieces and additional spices to taste.Bake at 375 to 400 degrees for 10 to 15 minutes. Time and temperature will vary with volume of sauce and other ingredients. Cool for several minutes on a wire rack before serving.
