Directions Makes about 8 1-cup servings 12 cups water or vegetable broth1 cup dry brown lentils1 cup dry short-grain brown rice1 small onion, chopped (about 1 cup)2 tablespoons minced garlic (about 6 cloves)1 cup finely chopped parsley, loosely packed1 teaspoon dried oregano1 teaspoon dried thyme1/2 teaspoon black pepper1/4 teaspoon celery seeds1/4 teaspoon cinnamonsalt, to taste Bring water or broth to a boil in a large pot. Add lentils, rice, onion, garlic, parsley, oregano, thyme, black pepper, celery seeds, and cinnamon. Reduce heat, bring to a simmer, then cover loosely and cook, stirring occasionally, until lentils and rice are tender, about 45 minutes. Add salt to taste.
