Lycopene, also found in tomatoes, pink grapefruit, papaya and guavas, is a powerful antioxidant. It has been extensively studied for its amazing ability to protect against cardiovascular disease and strokes. Give this refreshing recipe a try and enjoy watermelon while it’s at the peak of its season! Ingredients: 4 cups watermelon, seeded & diced 1 large cucumber, peeled, seeded, & diced 1 jalapeño, seeded & minced (finely diced) 2 Tbs. rice vinegar 2 Tbs. lime juice salt (to taste) toasted pine nuts for garnish Directions: Combine all the ingredients in a large bowl.
