Mushroom Recipe and Get Spoiled with Olive Oil

September 10, 2007 Recipe Stuffed Golden Portobellos Virgin olive oil is one of the healthiest oils because it is minimally processed and naturally rich in nutrients, powerful antioxidants, and healthy monounsaturated fat. The wonderful flavor of olive oil is a great incentive to use it as a staple in your kitchen... it's a tasty and easy way to help prevent heart disease! Try these Stuffed Golden Portobellos alongside a light salad with olive oil dressing and enjoy it in good health! Ingredients:4 portabello mushrooms1 Tbs. olive oil1/4 tsp. salt1/8 tsp. pepper2/3 cup Galaxy Foods Vegan Slices, shredded2 slices meat-free Smart Bacon, crisply cooked (optional)2 small tomatoes, seeded & chopped1 Tbs. fresh parsley, minced1 Tbs. garlic, choppedDirections: Preheat oven to 450 F. Line a baking sheet with foil and spray with cooking oil; set aside. Wash mushrooms and let dry; brush mushroom caps and edges with oil; sprinkle stem-side with salt and pepper and place, round side down, on baking sheet. Divide vegan "cheese" slices among mushroom caps and bake 10 minutes, or until mushroom edges begin to brown. Remove baking sheet from oven and sprinkle soy bacon (chopped), tomato, garlic and parsley over mushrooms. Return baking sheet

to oven and cook an additional 5 minutes. If desired, cut into wedges and serve with toothpicks. that virgin olive oil can help ward off harmful blood clots in people with high cholesterol. Researchers attribute this to phenols, substances found in the oil proven to have beneficial effects on the heart. The study examined the effects of eating different kinds of olive oil in individuals with high cholesterol. The analysis showed lower concentrations of a blood clotting antigen in individuals that consumed olive oils with higher levels of phenol. Extra virgin oil has the highest levels of phenol.
