September 17, 2007 Recipe Caliente Kebabs If you’re not already a broccoli fan, then think twice! This vegetable can be prepared to perfection and help keep your body’s defenses strong. Broccoli contains powerful compounds, called phytonutrients, which work to fight off cancer. It’s also an excellent source of A, C and K vitamins, folic acid, fiber and potassium. Try these flavorful Caliente Kebabs along with your favorite fresh veggies before the summer is over. Ingredients:Marinade:4 oz. rice vinegar8 oz. vegetable oil1 oz. garlic, fine chopped2 tsp. dried thyme1 Tbs. sea salt1/2 tsp. pepper Vegetables:12 white mushrooms12 cherry or grape tomatoes12 large broccoli florets12 large cauliflower florets1 large bell pepper, sliced into 12 pieces1 large onion, cut into 12 pieces6 oz. zucchini6 oz. yellow squash Directions: Combine the marinade ingredients and set aside. Cut zucchini and squash to 1/2" semi circles. Blanch & refresh zucchini, squash, onion, cauliflower, broccoli & pepper. To blanch, briefly submerge

in boiling water, then plunge immediately and briefly into ice cold water. Drain thoroughly, and mix with mushrooms into marinade. Allow to soak for 30-45 minutes.
