Meatout Mondays October 1, 2007 Recipe Pineapple Granola Bars Pineapple has a vibrant tropical flavor, bursting with tangy sweetness. It's also an excellent source of manganese and vitamin C, the body's primary water-soluble antioxidant that protects cells. Diets rich in vitamin C have been shown to boost the immune system. Add your favorite dried fruits to this Granola Bar recipe for a nutritious and delicious anytime snack. Ingredients: 1 1/2 cup whole wheat flour 1 1/2 cup granola 1/4 cup brown sugar 1/2 tsp. baking soda 3/4 cup vegetable margarine 1 cup pineapple fruit spread Directions: Stir together flour, granola, brown sugar and baking soda. Cut margarine in chunks and mix together until mixture is crumbly. Pat 2/3 crumbs in the bottom of an ungreased 13x9x2" baking pan & top with fruit spread. Sprinkle remaining crumbs onto the mixture. Bake at 375 F for 20 to 25 minutes. Cool on a wire rack. Cut into bars and enjoy with your favorite soy yogurt! Researchers at the University of California School of Medicine evaluated nearly 7,000 adults, finding that almost one-third had antibodies against a strand of bacteria believed to be the

cause of most ulcers. Chronic infection with this bacteria is an important risk factor for both ulcer problems and gastric cancer. The findings reveal that higher blood levels of ascorbic acid were associated with lower rates of infection by 25%. Higher intakes of vitamin C rich foods in the stomach help prevent infection and ulcers. Vitamin C is present in fruits and vegetables including pineapples, oranges, lemons, and bell peppers. Each year, 500,000 new cases of peptic ulcer disease surface in the U.S..
