Guest guest Posted October 3, 2007 Report Share Posted October 3, 2007 Bean Salsa One can each of the following, all to include juice EXCEPT black beans:** Black beans****drain and rinse these, Do not add fluid**** Pinto beans with juice Kidney beans (discard 1/2 fluid)“ Black eyed peas (discard 1/2 fluid)“ Great northern (or other white bean) (discard“ 1 can tomato sauce (can use 2 if needs more liquid) 1 can diced tomatoes 1 can whole kernel corn 1 can green chilies (can use fresh jalapeño if like HOT) 1 cup fresh chopped green onion 1 cup fresh chopped Cilantro 1 Tblsp. Garlic powder 4 Tblsp. Balsamic vinegar 1 Tblsp. Cumin powder Salt and pepper to taste ** Note: A co-worker gave me this tasty recipe and I ate her rendition of it. She said to add the juice from all beans except the black beans. But, I recommend you discard 1/2 the juice from each bean can (and omit all juice from black beans). Make your own choice though.
