October 29, 2007 Recipe Spooky Eggless Sandwich Halloween cooking doesn't have to be a terror! This recipe is so simple that it won't scare you in the kitchen, and so nutritious that it won't make your heart skip a beat. Have fun with these Spooky Eggless Sandwiches, which are perfect for parties. They are free of animal products and cholesterol, but full of flavor! Ingredients: 1 lb fresh firm tofu, drained1/2 small red onion, diced very small1 quart water1/4 cup white vinegar1/4 tsp salt1/8 tsp turmeric2 tsp spicy mustard1 tsp

hot sauce, or to taste1/8 tsp paprikaSalt to taste Directions: Cut tofu into small cubes. In a large pot, add water, vinegar, and pinch of salt. Bring to a boil. Add tofu cubes, bring to a boil again. Turn to medium, and simmer about 15 minutes. Drain boiled tofu. Mix in turmeric, mustard, hot sauce, and paprika. Add diced onions and mix gently. The group has a least one social event a month including potlucks, restaurants, hikes, and picnics on

the beach. Events are free and open to everyone. Together with their website, they help connect people interested in Veganism. Northern Vegans is dedicated to educating people by giving lectures and distributing tons of literature. Some members maintain extensive lending libraries encouraging people to check out books and videos about a vegan lifestyle. The group recently donated books to a public library in Marquette, MI and will have a display there during the month of November. Northern Vegans also works closely with the Northern Michigan University student group, NMU Veg(an)etarians.
