Meatout Mondays December 10, 2007 Recipe Sweet Potato Latkes It’s time for a fun, cholesterol-free recipe that will satisfy your cravings for a flavorful, savory dish. Impress your family and friends with easy and delicious egg-free Sweet Potato Latkes. The sweet potatoes add great flavor and make a colorful spin on traditional latkes. Here’s a bonus: adding flax seeds to your diet provides the much needed Omega 3 fatty acids. Ingredients: 2 large sweet potatoes (yams) 1 large sweet onion 1 tsp. baking powder 3 Tbs. flour 1/3 cup whole flax seeds + 1 cup warm water salt & pepper (to taste - approx. 1/2 tsp. salt) Directions: Grate the sweet potatoes and onion into a bowl. Prepare a flax mixture in a food processor or blender; grind the flax seeds until they are a fine flax meal; slowly add water until the mixture has a thick milk shake-like consistency. Researchers examined 161 men diagnosed with prostate cancer. Also investigating the role of a low-fat diet (with fat contributing less than 20% of the total energy), the researchers divided the men into 4 groups: placebo control, flax seeds, low-fat diet, and the combination of low-fat diet with flax seeds.
