January 7, 2008 Recipe Lentil Curry with Veggies & Rice Become a better you in 2008! Get healthier and feel younger by including more low-fat, cholesterol-free veggie foods into your diet. Start with this delicious, high-protein Lentil Curry. Full of flavor and high in fiber from whole grains, this satisfying dish will treat your body right. Ingredients: 1 ½ cups green lentils1 ½ cups brown rice6 cups water2 potatoes, diced2 carrots,

diced1 zucchini, diced1 Tbs. olive oil2 tsp. curry powder1 garlic clove, minced1 can diced tomatoes Directions: Bring 6 cups of water to a boil in a large pot; add lentils (after washing well), reduce heat, and simmer for 20 minutes. Add rice and cook for another 45 minutes. Heat olive oil over medium heat in a large cast iron pan; add potatoes and carrots, stirring occasionally. Add curry powder and cook for about 30 minutes; add zucchini and cook 5 minutes more. Add garlic to vegetables (sauté prior, if you prefer). Add tomatoes to vegetables in cast iron pan (avoid overcooking the tomatoes). When rice and lentils are soft, sprinkle extra curry powder, some salt, and extra virgin olive oil (if desired). The results support the 2005 Dietary Guidelines to Americans recommendation to consume at least three whole grain servings per day. The study, published in the European Journal of Clinical Nutrition, examined the effects of dietary patterns in 4,200 men and women between the ages of 55 and 69. Researchers found that the people who consumed the most whole grains had a lower Body Mass Index (BMI) and were less likely to be overweight or obese.
