Meatout Mondays January 28, 2008 Recipe Creamy Corn Chowder Cozy up with corn chowder on a cold day! There’s nothing like a hot bowl of sweet, creamy corn to satisfy your taste buds, fill you up, and keep you going throughout the winter. Corn is high in B1, B5 and C vitamins, folic acid, and fiber. Cooked or raw, this grain is a surprising source of protein and low in fat and calories. Ingredients: 1 Tbs. olive oil (or broth, for no fat) 1 small onion, chopped 1 cup celery, chopped 1 cup carrots, chopped 1 clove garlic, minced 2 ½ cups

water 2 cubes vegetable bouillon 2 cups corn 2 cups soymilk 1 Tbs. flour 1 tsp. dried parsley 1 tsp. garlic powder 1 tsp. salt 1 tsp. pepper Directions: Heat oil (or broth) in a large skillet over medium heat. Stir in onions and celery; cook until just slightly golden and stir in carrots and garlic; cook until garlic is slightly golden. Meanwhile, bring water to a boil over high heat; stir in bouillon, and reduce heat to medium. When bouillon cubes dissolve, add corn and the vegetables from the skillet; cook until vegetables are tender (add more water, if necessary). Reduce heat to low, and pour in 1 cup of soymilk; stir soup well, then stir in remaining soymilk; quickly whisk in flour; stir in parsley, garlic powder, salt, and pepper. Cook, stirring constantly, until chowder thickens, about 15 to 20

minutes. Search for more veg recipes at www.AllRecipes.com! store Vegan Essentials Now that the meal is over, what’s for dessert? Delicious cruelty-free doughnuts! The three year study, conducted by researchers at Yale University School of Medicine, examined vitamin levels of nearly 700 volunteers over the age of 65. Study participants with lower vitamin E levels performed worse on tests of basic physical ability. Researchers note that the odds of declining in physical function were 1.62 times greater than people with higher vitamin E levels. Vitamin E is an antioxidant that protects the body’s tissues from damage caused by free radicals. It also plays a role in the formation of red blood cells. Vitamin E can be found in many plant-based foods such as wheat germ, soy, nuts, seeds, olives, and green leafy vegetables like spinach and asparagus.

vegetarian, it can also be a little complicated… especially at fast-food restaurants. But that doesn’t stop high school senior Rebecca Collins from sticking to her convictions. A vegetarian for more than three years, Rebecca has had plenty of opportunities to fine-tune her dining experiences and has never regretted the lifestyle change. She says, “The benefits outweigh the inconveniences… vegetarianism is much healthier than a diet that includes meat, and being a vegetarian has made me try a variety of healthier foods.” Being veg continues to get easier too, since an increasing number of restaurants are now offering a variety of options. Rebecca explains that she chose this lifestyle because she did not want to eat defenseless animals. Her compassionate decision taught her responsibility because she needed to take charge of her meals. “Studies show that diet choices made when you’re younger are more likely to stick when you’re older, so

becoming a vegetarian when you’re a teen can help you stick with it for the rest of your life” revealed the smart teenager. To read the full article, click here! Pass it on!
