Meatout Mondays February 4, 2008 Recipe Super Bowl Jalapeño Poppers If you’ve got party plans this weekend, here’s a fun snack for you and your friends to indulge in! These Super Bowl Jalapeño Poppers are a dairy-free version of a classic American finger food. Rather than cream cheese, these poppers are made with Tofutti Better Than Cream Cheese (check out the product section below to find out more about it). This recipe is proof that you can eliminate animal products from your diet and still spoil yourself with the treats you love most! Ingredients: 12 jalapeño peppers 8 oz. Tofutti Better Than Cream Cheese (see product below) 1 cup plain soymilk 1 cup flour 1 cup breadcrumbs oil for frying 1/2 tsp. cayenne (optional) Directions: Slice the jalapeño peppers in half lengthwise, remove tops and seeds. Fill the jalapeño peppers with the Tofutti Better Than Cream Cheese mixed with the cayenne pepper, if desired. Put the soymilk and the flour into two separate bowls; dip the stuffed jalapeños into the soymilk and then into the flour, making sure that they are well-coated; allow the coated jalapeños to dry about 10 minutes. Dip the jalapeños

into the soymilk again and roll them through the breadcrumbs; allow them to dry then repeat the process to ensure that the entire surface of each jalapeño is coated. In a large skillet or deep fryer, heat the oil to 370°F; deep fry the jalapeños about 3 minutes or until golden brown then transfer them to paper towels to drain. Healthy Hint: For a healthier version, use less cream cheese and eliminate the oil and bake (rather than fry) at 375°F for 35-40 minutes or until golden on the outside.
