Recipe

Ultimate Veggie Chili

Chili is one of America's favorite dishes, perhaps because it’s so versatile. You can increase spices for a richer flavor, or add more beans, peppers or corn for heartiness and nutritional value. This recipe features bulgur, a form of cracked wheat, but you can substitute veggie crumbles for a more traditional flavor and texture, or use mushrooms for a wheat-free version. Ultimate euphoria!Ingredients:

3 Tbs. olive oil3 onions, chopped1 Tbs. each of chili powder & cumin1/4 tsp. cayenne pepper2 peppers (green, red, or yellow), chopped 3 garlic cloves, chopped3 Tbs. unsweetened cocoa powder1 large can undrained tomatoes, chopped1 cup water1 can red kidney beans, rinsed & drained1 can black beans, rinsed & drained2 cups fresh or frozen corn1/2 cup bulgur, mushrooms, or veggie crumbles salt & pepper, to tasteavocado and/or fresh cilantro, chopped (optional)

Directions:

 

In a large pan, saute the onions, spices, and mushrooms or veggie crumbles (if using).

Add peppers and garlic and saute for 1 minute; add cocoa, tomatoes, and water.

Bring to a boil, then add kidney and black beans, corn, and bulgur (if using).

Reduce heat to low and simmer, uncovered, for 15 minutes; add salt and pepper to taste.

To serve, top with avocado slices and/or sprinkle with cilantro.

Fast Food & Diabetes

Avoiding "fast food" burgers and fried chicken cuts your risk of developing type 2 diabetes, which is closely linked to obesity, a new study reveals. Published in the American Journal of Clinical Nutrition, researchers examined fast food consumption, lifestyle habits, and the development of diabetes in 44,072 women who have filled out questionnaires since 1995.

Participants who ate fast food burgers or fried chicken at least twice a week were 40 to 70 percent more likely to develop type 2 diabetes than their counterparts who never ate these calorie-laden foods. Additionally, women who ate fast food burgers, fried chicken or fish, or Chinese food more than once a week had higher body mass index (BMI) on average.

Cowboy Embraces Veganism

Rocco was a meat-loving cowboy... and he was dangerously unhealthy. A scan of his heart revealed that he was in the 97th percentile for plaque in his arteries, meaning only 3 percent of the population in his age group have more plaque in their arteries. Making an appearance on the Dr. Oz show, Rocco was challenged to drop meat, eggs, and dairy from his diet for 28 days. According to Dr. Oz, 52 year-old Rocco had the heart of an 85 year old man and needed to change his diet to reverse dangerous heart disease.

After just 28 days on a vegan diet, Rocco’s waist size decreased by 6 inches, his weight decreased from 265 to 235 pounds (a total of 30 pounds!!!). His glucose levels dropped from 172 to 99, and he went from being in the diabetic range to within normal limits – in only 28 days! He has improved so much, he has now decided to stick to the diet. Rocco’s health has improved dramatically and will continue to get even better.
