Guest guest Posted February 24, 2006 Report Share Posted February 24, 2006 I am not a vegetarian, but would like to incorporate 2-3 vegetarian days into my meal planning. I need some advice on good meals that have enough protein and the family would like. We do like beans and brown rice. I am 5'2 " and 122 pounds. I am currently nursing my 3 year old (yes, 3 years and still nursing). Since the meals need to be safe for me with nursing, safe for my kids (3 and 7) I need meals without soy. Other than that there are no allergies, etc.. Please give me some advice, ideas. I have eaten lots of beans and rice combos in the past, but never knew if they had enough protein. Thanks. Here are some meal ideas the kiddies might like too: -- veggie cheeseburgers with oven baked chips (skin on) and baked beans, salad + fruity smoothie made with cooked brown rice or rice flakes in it for desert (or snack or after dinner, you don't have to have rice and beans in the same meal for your body to make complete protein; having them the same day is what counts) -- vegetable lasagna with cheese sauce instead of bechamel, salad, something with nuts for desert -- creamy lentil soup, quiche (most varieties usually contain eggs and cheese), salad -- vegetarian pizza When I make soy-free veggie burgers, I add some protein to the mixture or en extra egg white or two (from hard boiled eggs), as well as one egg to keep it all together.
