I am seeing that most of you soak beans. Living in South Florida among the Cuban population for many years, I found they didn't soak beans. Beans and rice are a staple for them. They just rinse and cook. I have gotten into that habit. Since I cook them in a crock pot anyway, it doesn't matter that it takes hours. My experience (and my Cuban friends ) tells me that beans are a lot easier to digest, if you know what I mean, if you soak them first. You may want to try if it makes a difference for you.
