Guest guest Posted May 31, 2006 Report Share Posted May 31, 2006 Okay, I'm thinking I would really like to transition more toward vegetarian eating, more of the time. Following the " evolution, not revolution " dictum, I'm trying to come up with a plan that will allow me to make this change and not a) spook myself and 2) leave my body short on anything it needs. (actually I'm thinking it could be even better because I'll HAVE to work more with vegetables!) So here's what I can do. My breakfast is always vegetarian (George's Restore shake, brown, veggie juice), no work needed there. Lunches are leftovers from dinner 99.999% of the time. So I simply need to develop some dinners that will work for me. It's not as hard as I thought! I've been a bit haphazard about my meal planning lately; my animal- protein meals are good and program-solid but not very inspiring. So I can see this as an opportunity to delve into those great vegetarian cookbooks and come up with a few things that will work for me, and start to incorporate them regularly. I can journal, journal, journal to make sure I stay steady and my body stays happy. It feels a bit like learning to work step 3 again -- baby steps, planning, and getting used to new things! I think I'll start by cooking some chickpeas in my crockpot today, and making an Indian dish with them (khatte chhole, sour chickpeas). I'll let you know how it turns out! Your chick pea recipe sounds wonderful, if the dish comes out ok, would you mind sharing it?
