Hi,

I have a recipe that I would like to share.

 

Johnny Corn Cakes

 

Mix together:

2 cups cornmeal

2 cups rolled oats

1 tsp. salt

1/2 cup unsweetened coconut

 

Whiz lightly in blender:

2 1/4 cup hot water

1/2 cup raisins(here you could use applesauce or banana, just put in a little bit less water)

 

Mix all together. Let stand a few minutes and spoon onto prepared sheets. (I used an ice cream scoop.) Bake at 325 degrees for 40 to 45 minutes, or until bottom of cakes are golden brown.

 

Yummy,warm with butter on them.

As these don't have any preservatives or sugar in them, you will need to freeze them after 24 hours, so they can stay fresh. These are good for people who have allergies to wheat.

Give them a try. They are really good.

These sound good. Do they come out shaped more like

cookies (thick and round) or more like pancakes

(flat)?

 

Would I eat them with a fork or with my hands?

Sharon,

 

I use an ice cream scoop and flatten them out like a cookie. I use my hands to eat them, but you could use a fork also. They are really good.
