Used 1.5 cups of Non Fat Plain Yogurt, combined with 1 cup of cooked long grain basmati rice (leftover), added some cinnamon and a touch of vanilla extract. Mixed it all up and it's been the closest thing to Tapioca Pudding that I've had in many years. Don't think it will win any awards on the Cooking Channel, but it works for me.... I just realized that I'm always in a hurry. Guess that's another reason why Ranch was so good for me, just being in one place for a given time..... Just wanted to share.
