Last time I made and brought a Greek Salad, it was gone before I had a chance to eat. The time before a pot of Lentils, nobody touched them looked like yellow muck, plenty for me.... Sometimes our eggplant salad remains untouched, other times my rice vanishes before I can get a serving. Our most successful ideas are: - Hummus. I bring it in a nice dish with some ww crackers in a basket. - Rice salad: brown rice (yamani is the kind that best works for me, and looks nicer), little cubes of tofu (sauteed or baked), ground almond and fresh green onion (chopped as thin as possible). My husband likes to add soy sauce to it, but I find it too salty. - Tofu or lentil empanadas: too much a local dish, I guess. Would take long to explain and even longer to cook! We also find that sometimes, since we don't drink soda or alcohol, we are left with only warm tap water (and water in Buenos Aires tastes as though it was coming from the toilet bowl! . Whenever there is a barbecue or similar event, we bring a couple of bottles of club soda and lemons in a cute basket with a ribbon as a sort of gift to our host. It can also replace the typical bottle of wine one usually brings in such occasions. Oh mE! Pumpkin time for me. Nighty night. I make a ton of it so I know there’s still some for me <grin>. Ingredients are pretty simple and you can play around with the amounts: Cooked brown rice Canned black beans, rinsed Diced tomatoes Lots of chopped cilantro Diced red onion Canned corn, rinsed And then a dressing of: Olive oil Lime juice Salt Pepper Cumin (heating in a pan first to release the flavors). I learned the hard way that unless you are at the front of the line, you may not get any protein (and if you are a vegetarian, you would be even less likely to find it. Here's what I did so that I could attend the potluck, enjoy it, and eat right. We were supposed to bring a dish that would serve 8. I always opted to make a main dish. I'd make a bit extra, and put a serving for me in a plastic container with a lid. I'd also bring wasa in a ziploc bag, in case I couldn't get any browns. Then I'd go through the line, take some of what was program friendly and appealed to me, and supplement with the food I had set aside. I would think things like vegetarian chile or curry, or tabouleh (which you can also make with quinoa) would go over well at a potluck. And if the dish you opt to bring isn't high in protein, you could pack a serving of vegetarian protein for yourself. If anyone asked me about my little stash, I'd just tell them I ate a special diet and needed to make sure I ate the right food. Explaining that you are a vegetarian would probably be even more readily accepted as a reason for bringing a little private stash. Then I'm covered for protein, but if there's some other protein available in the potluck, I can use my bean salad as a brown instead. I did bring a wonderful wild rice--based dish to Easter one year, and it was a terrific hit. I knew there were going to be egg dishes, so I wanted to bring a brown. I don't worry much about what other people like to eat, I have to admit. It doesn't bother me any if I have lots of leftovers. :-) If I were worried about people eating my dish too quickly, I would make sure to dish some up for myself first. I printed out all of the responses and put them in a Pot Luck Folder. Think I'll try (Heathers) recipe, sounds really good, people will like the color. Also will take (Allisons) suggestion of putting a stash in a ziplock bag, along with an extra stash of tofu (Augistina) or 3 Bean Salad (Sharon). I'm so happy that you guy's came up with some great ideas. In the past felt kind of alone when going to these things, no more, with the RR Veggy Groups ideas feel like you guy's will be with me.
