I am living in Belgium and despite having no clear symptom about any celiac disease (blood work doesn't show any signal) I feel like I coul be very sensitive to it. Bad digestive feelings, huge mineral deficiencies despite using iron and multivitamine/mineral complements, some diarrhea, tired, muscles and joints pain. I would like to try these bread recipes but does anybody know what is exactly in these GF bread mix? Could I replace these with some kind of specific flour? I don't know what you can get in Belgium compared to what I have here in Canada, but I use a blend of chana (chickpea), sweet rice, tapioca starch. Have you tried the recipe for Tom's bread? I think you should be able to get all the ingredients for that in your country and it is the best bread we have tried. You can also use it to make pizza, calzone, all sorts of things. In the recipe files (the cake section), there are some of the flour mixes. The bean mix (garbanzo, fava, etc) one is the one I was referring to. All the gluten free companies that I know of also make a similar mix. If none of those flours are available to you, you might consider mail ordering (I did this when we were overseas) or just let us know what flours you can get and see if anyone has ideas to work with what you have. Further I just don't trust many of the bread Co's to leave the sugar out. So please chime in and let us know. I've also tried leaving it in, and it doesn't seem to be a problem for me, probably because it doesn't use very much. I had always had trouble making 100% whole grain sourdough bread until I found this recipe. For me, this one seems to work. Hope this helps.
