Hi all, I have many, many recipes (I wrote a vegetarian cookbook in 1974, now out of print) so before I start posting, would like to get an idea of categories folks would like - main dishes, holiday meals, with or without dairy or eggs? soups, salads, "ethnic" cuisine, adaptations of meat-based dishes, company fare (that is, food for guests who are confirmed carnivores who ordinarily would turn up their noses at "rabbit food" would eat happily)? Gail,

Must be " Radiant Recovery Program Friendly Recipes " , how about everyones

favorite 2 or 3

to start out with? So having protein and perhaps browns in the recipe would be

good.

Had quite a few requests for Crock Pot type recipes make a batch for the week...

OK! Well, the simplest one is Vegetarian Chili. I make my own spaphetti sauce and freeze ahead (saute onion, garlic, green pepper in olive oil, simmer with canned or fresh tomatoes for several hours, add fresh or dried basil and oregano, and if you like, salt and pepper). I freeze in a variety of sizes (pints, quarts, half-pints) to use as a sauce for whole wheat pasta, and as a base for other dishes. For chili: To a quart of sauce, add soaked and cooked (or canned) kidney beans, fresh or frozen corn, minced hot peppers or chili powder (whatever is on hand), lightly sauteed cashews. If you do not mind using packaged foods, you also can add in something like Morningstar Farms Crumblers (a soy product, high in sodium) which makes the chili taste more like meat (I do not prefer but my carnivore friends do). Just simmer for awhile (on stove or in cooker), serve over any whole grain or pasta. Add a big green salad and you've got a
