New to this, but I'll contribute a recipe...

1 pkg of tofu, drained and sliced into strips

1 eggplant, sliced and quartered (if large)

2 lg portobello mushrooms, sliced into strips

3 zucchini, sliced into rounds

1 red onion, sliced and halved

 

Toss these in balsamic vinegar, sesame oil, soy sauce, herbs to taste.

(For me it's a pretty high ratio of balsamic vinegar to the other

ingredients, but I'm sure you can do it any which way)

 

Roast on 1-2 foil-lined cookie sheets in 400 degree oven for 45

minutes (until eggplant is soft). Yummy with brown rice or quinoa.

 

(could also use red pepper in addition to or instead of any veggie

above)
