Guest guest Posted September 5, 2006 Report Share Posted September 5, 2006 1 pkg of tofu, drained and sliced into strips 1 eggplant, sliced and quartered (if large) 2 lg portobello mushrooms, sliced into strips 3 zucchini, sliced into rounds 1 red onion, sliced and halved Toss these in balsamic vinegar, sesame oil, soy sauce, herbs to taste. (For me it's a pretty high ratio of balsamic vinegar to the other ingredients, but I'm sure you can do it any which way) Roast on 1-2 foil-lined cookie sheets in 400 degree oven for 45 minutes (until eggplant is soft).
