I haven't been planning lunch too well and I've had some super fatigued afternoons. Today was better, lunch at home, left over rice and beans warmed up in the microwave. Guest guest Posted September 12, 2006 Report Share Posted September 12, 2006 Yes, lunch can be a challenge, especially if you have to eat on the road, as I often do. You can do a humus roll-up on a whole wheat tortilla with lots of vegetables (you may need two, depending on protein needs). If you eat dairy, you could try 1/2 container cottage cheese (or however much you need for protein) mixed with a small handful pecans (I like to toast them lightly before adding), a sprinkle of familia or oatmeal (enough for your brown), and a little bit of fruit. This one can travel right in the container. There are lots of good recipes out there for marinated tofu, which you can slice onto whole grain bread. Add carrot and celery sticks for a good tasty lunch. Nice thing about this program is that you can beat these afternoons once and for all, nice hummm. What helped me beat these afternoons was eating " enough protein " for breakfast. Due to my schedule at the time, had to wake up and eat breakfast at work. So had to pump up the protein amount, that helped. Also got a HUGE Cup for water. Alway's having a HUGE Cup of ice water to make it through the afternoon, helped satisfy me as well (these cups are now on sale at the RR Store on line). Figured the water was helping to clense the toxins from my body. Another thing that helped me was a little later on in the program, changing from refried beans to black beans. Also trying complementary beans helped too. Then one day woke up and could no longer eat white rice. I was at a Panda Express and started choking on the white rice, was stuck in my throat and could not breath, figured that was a sign. Once I got my breath back, decided at that point my body could no longer handle white rice and changed over to brown. But that's a little later in the program. Guest guest Posted September 15, 2006 Report Share Posted September 15, 2006 I've found a lot of canned/boxed lunches that work well as long as I make myself some brown rice to go with it. For example, a can of black bean soup works great with brown rice mixed in or on the side, with maybe a hardboiled egg or a slice of cheese on the side (or cheese on the soup!). There are some good Indian food boxed meals that have good protein amounts too. Again, I add the brown rice and usually some extra protein on the side too. You can add some other brown, of course, but I like to make a big batch of brown rice on Sunday that I then use throughout the week. But you could just as easily use a whole wheat tortilla or slice of ww bread or whatever sounds good. Cheese sticks and hardboiled eggs make great add-ons to bump up the protein amount. If you're in a jam for brown rice, the fast food chain Pick Up Stix has brown rice. (They are located in California, Arizona, and Nevada.) Sometimes I just grab a side of brown rice there to mix with food from somewhere else.
