Was wondering what topics you would all like to discuss? There are lot's of folks who are " lurkers " , reading the posts but not saying anything. We want to hear your voices. Part of the addiction to sugar is keeping quiet. Let's us know subjects will help get you to that next step? Were all here to help. I have been enjoying the recipes that have been posted. They're helping me learn about other protein choices. I've found the fat from some types of m$eat can be a trigger for me in the same way that butter and cheese can be. I'm slowly trying to replace the meat in my diet with vegetarian proteins. I work at home to be with my three year old son and I recently re-enrolled in college to finish my degree. I'm still adjusting to the time demands so I have not done that much experimenting in the kitchen lately. Just out of curiosity, does anyone know any good Ethiopean recipes? There is a wonderful Ethiopean restaurant in our town that will not divulge its secrets. I could literally eat there every day. They have a garlic lentil dish and lima been dish that I would love to have the recipes for. A HUGE congradulations on being on " step 7 " and also going back to school, that's amazing & very powerful. You don't have to be a vegetarian to post here, it's ok. Fats are BE Raisers and can be a trigger food. That ties to a statistic which I heard from a contact that I know whom works for McDonalds, and claims that 72% of the transactions are for Cheeseburgers, interesting.... Found an Ethiopian Recipe for you, high in protein, low in fat. Enjoy. Bob Ethiopian Lentil Bowl Ingredients: 1 lb lentils 2-3 large onions 1/2 cup oil 3tablespoon tomato paste 1/2 teaspoon paprika 1 head garlic 1/2 teaspoon ginger 1/4 teaspoon black pepper 1 teaspoon salt 3-4 cups water Directions: Sort the lentils and soak in tap water for 30 minutes. Rinse in running water and drain. Peal and finely chop the onions. peal and mash the garlic. Heat the oil in large pan and saute the onion until golden. Add tomato paste and paprika and mix. Add half the water and the garlic, ginger pepper and salt. Stir well and then add the rest of the water, stir again ,cover and bring to boil. When the water boils, add the lentils , lower the flame and cook 20-30 minutes, until the lentils soften. I just had a talk with the chef at one of the healthier restaurants in town about cooking lentils, so I'm all fired up to try this recipe. Apparently, I've been letting them boil for too long when I cook them. No more than two minutes tops for those of you with mushy lentils like mine. It looks like this recipe doesn't call for any boiling of the lentils, just boiling the water before you add them. I will try my best to avoid falling back into my pattern of lurking <smile>. I'm finding cooking lentils or beans along with rice and maybe an apple is an easy pack for a lunch or dinner. I have been trying for years to get some of my favorite recipes out of my favorite ethiopean restaurant. Oddly enough, right after you gave me this recipe, I got the recipe from someone who got it from the waiter. He had been working on the waiter for some time to get him to give this up. Since fair is fair, I'll share my recipe with you. Everyone just has to promise not to move to Michigan and start a competing ethiopean restaurant. The Elusive Lima Bean Recipe (1) 16 oz. bag of frozen baby lima beans 3 cups water 1/2 teaspoon tumeric 1/4 teaspoon salt 1/4 teaspoon garlic powder 1/4 teaspoon chopped ginger or 1/8 tsp powdered ginger ( I just noticed that I've been using 1/8 tsp of powdered ginger - add more ginger if you need it I guess) Put everything in a sauce pan. Bring to a boil. Keep at a slow boil until sauce is reduced to desired thickness. Stir frequently while cooking. I've also found adding in olive oil after its done cooking makes it better.
