Now I'm ready to explore some healthy vegetarian breakfasts. I'm not vegan (though I'm open to the idea...) I'd love to hear what you all suggest for breakfast. I'm running out of ideas. Thanks! Guest guest Posted October 24, 2006 Report Share Posted October 24, 2006 Here are some breakfasts from the past two weeks. I most often have a shake, because I can take it with me. 1. Irish oatmeal with a small handful of raspberries + 2 Morningstar Farm breakfast patties. 2. A whole wheat burrito shell with refried beans and sauteed vegetables. 3. Cottage cheese (I use lactaid) with a bit of fresh fruit and chopped almonds topped with plain yogurt, and a slice of whole grain bread. 4. Cooked edamame drizzled with a tiny bit of olive oil an pepper, and home fries. 5. Shake made with protein powder, Lactaid milk, blended with 1/3 cup raw oats, 1/2 frozen banana and a tablespoon of Hershey's unsweetened cocoa. 6. Three eggs, scrambled or fried, with Tabasco or pepper rolled in a whole wheat burrito. 7. I'm alway's running around the town, so breakfast has to be fast for me, below are some of my speed breakfasts: - Shredded Wheat with Protein Powder & Some form of milk Soy, Rice, or Cow. - Oatmeal with Protein Powder & Almonds & Some form of milk. - Hardboiled Eggs, Whole Wheat Toast. - Cheese & Mushroom Omelet, Whole Wheat Toast - Oatmeal/Cottage Cheese Combo. I've never tried this, cause it just seams wrong, mixing cottage cheese with hot oatmeal, some people that I've talked with really love it. -Georges Shake Mix (available from RR store) - Tofu squares & triscuits - Cheese & triscuits - Juevos Ranchero's with Cheese Enchilada, whole wheat tortilla. - Eggs and Onions Scrambled together, with whole wheat toast. - Back Up Food (In Case of Emergency) stored in car Soybeans (Dry Roasted Trader Joes Brand) and Shredded Wheat, just because you never know.... That's about all I can think of, been eating the above for 5+ years, never seam to get tired of it. When I need lot's of mental energy I go for the tofu squares and triscuts, sounds gross, but I try to eat this one when nobody is watching, aka too many ( " your nut's " ) looks. Maybe we be adventurous and designate one day next week as "Try O and CC for Breakfast Day."
