Guest guest Posted October 29, 2006 Report Share Posted October 29, 2006 hello everyone, here is a recipe that i like and it's easy to make. i'm sure many people have a similar recipe but i thought i'd share it. it's from " the low-carb cookbook " Spinich Cheese Pie 2 (10 oz) pkgs frozen spinich 2 tbs butter 1 bunch scallions 1/2 med onion 6 eggs, beaten 1 (15 oz) container ricotta 1/2 lb feta 1 tbs dill 1/4C parsley pinch nutmeg oven 350 squeeze water out of spinich. mix ricotta, feta and eggs. melt butter and saute scallions and onions, when soft add spinich and cook about 3 minutes longer. add spices add spinich to the cheese mixture. pour into oiled 9x13 pand and cook about an hour. this is a tasty recipe, greek, i believe, minus the phyllo dough. it freezes well and everyone i've shared this with has like it. for all of the vegans on the list, do you think tofu cheese would work as a subsitute? i'd love to experiment with tofu cheese and make this a vegan recipe.
