Holiday Meal

I just realized that almost every Holiday Meal, wind up eating a salad, cheese,

& brown

rice. I make a " Great Salad " .

 

Bob's Holiday Salad (Thanksgiving, Christmas, 4th of July....)

 

2 English Cucumber (Cut into wedges)

6 Roma Tomato (Cut into wedges)

3 Bell Peppers, Red, Yellow, & Green (Chopped)

1 Can Garbanzo Beans

1 Can Kidney Beans

6 Scallion Stalks (Chopped)

1 Can Hearts of Palm (Sliced)

1 Handful of Artichoke Hearts (1/4'ed)

1 Cup Chedder Cheese (Chopped)

1/2 Cup Olive Oil

1 Lemon (Juiced)

10 Turns on Pepper Grinder

This sounds delicious, and thanks for sharing!

 

But...

Do you eat all the salad for yourself? There are 2 cans of beans.

Otherwise, what protein do you have with your salad, brown & cheese to

make it a meal?

this sounds really good....i've never had a palm heart...is that

canned? can you recommend a good brand for artichoke hearts? i've

had the frozen kind from trader joe's and didn't care for them.

this sounds like it travels well too...can pack it for lunch and

This year we also had Salmon too.

Palm Hearts are canned, then you slice them into circles. You may try if you

like the

Artichoke Hearts packed in oil in " Glass " containers.
